Synchrotron imaging links zinc and sulfur to higher soybean protein content

Soybeans provide about two-thirds of global plant-based protein meal, but protein levels have not kept pace with rising production. Researchers used synchrotron imaging to compare four soybean genotypes and found that those with higher protein also contained more zinc and sulfur. The finding suggests targeted mineral management could boost protein without expanding farmland.
